Dingle Single Malt Whisky is a high-quality single malt whisky produced by Dingle Distillery in Ireland. Dingle Distillery was established in 2012 and has become a key player in the Irish craft whisky scene.

Manufacturing Process

The Dingle Single Malt Whisky production process combines traditional methods with innovative approaches.

  1. Ingredient Selection : Dingle Single Malt Whisky is made from carefully selected Irish barley, grown in the unique climate and soil of the Dingle Peninsula, which gives the whisky its distinctive flavour.

  2. Malting and mashing : Barley is first soaked in water to germinate, then dried to turn into malt, which is then crushed and mixed with warm water to extract the sugars, called mashing, to obtain the wort that will be the base for fermentation.

  3. Fermentation : The wort is fermented with yeast. This takes 72+ hours, producing alcohol and complex flavors. The length of fermentation and the choice of yeast have a significant impact on the flavor of the final whiskey.

  4. Distillation : The fermented liquid (wash) is distilled three times in copper pot stills. Triple distillation enhances the smoothness and purity of flavour that is characteristic of Dingle whisky. The shape and size of the pot still also influences the character of the whisky.

  5. Maturation : The distilled spirit is aged in a variety of oak barrels. Dingle Distillery uses a variety of casks, including bourbon, sherry and port wine casks, which give the whiskey a complex and rich flavour. The maturation period is a minimum of three years, although many Dingle whiskies are aged for longer.

Characteristics and flavour

Dingle Single Malt Whisky has the following characteristics:

  • Nose : Fruity and floral aroma with hints of vanilla and citrus.
  • Taste : Sweet with honey and caramel, with spices and dried fruit flavors that fill the mouth. It also has a woody accent from the oak barrels.
  • Finish : Long lasting with a smooth and pleasant finish.

The key to enjoying Dingle Single Malt Whisky is to keep it simple while still bringing out its rich flavour.

  • Straight : First, try it straight without adding anything. Pour a small amount into a whiskey glass, slowly enjoy the aroma, and then put it in your mouth to enjoy its complex flavor.
  • Water : Adding a few drops of water opens up the flavor of the whiskey and brings out hidden nuances, especially with whiskeys with a higher alcohol content.
  • On the rocks : Chilling with ice can make the drink smoother and also reveal different layers of flavor.
