About Mitake Distillery : Mitake Distillery is located on the heights of the Satsuma Peninsula in Kagoshima Prefecture, in a beautiful location overlooking Kinko Bay and Mitake (Sakurajima) from an altitude of about 400 meters. Established in 2019, the distillery produces high-quality whiskey using carefully selected raw materials and advanced technology by rare craftsmen in this area with an abundance of natural soft water, cool and suitable for storage even in hot seasons, and clear air. By making the most of time, they create whiskey with special flavors and aromas.

Production process : We use natural soft water that flows at over 1,000 liters per minute, which is ideal for making whiskey. We use yeast selected from the yeast kept by Nishi Shuzo. We also use carefully selected two-row barley and age it in sherry casks.

Aroma : A highly fragrant and rich aroma with a well-balanced blend of baked apples, pear compote, the rich sweetness of apricots, the freshness of citrus peel, spices, and a fragrant toast.

Taste : It features a rich fruit aroma and a well-balanced flavor. When you put it in your mouth, the simple flavor of vanilla and chocolate spreads along with the dried fruit from the sherry casks. It is attractive to drink.
